Everyday Meatloaf (from Better Homes & Gardens Ground Meat Cookbook c. 1969)
This is my favorite meatloaf recipe - I've been making it since 1969! It has it's own topping, or you can bake it for 1 1/2 hours and then top it with my Spiced Tomato-Pineapple Jam, http://www.addoway.com/viewad/Homemade-Spiced-TomatoPineapple-Jam-1536747. Leftovers of this meatloaf makes great sandwiches!
Ingredients:
2 beaten eggs
3/4 c. milk
2/3 c. fine dry bread crumbs
2 tbsp. grated onion
1 tsp. salt
1/2 tsp. ground sage
Dash pepper
1 1/2 pounds ground beef
Combine everything except the beef. Add beef and mix well. Pat mixture into a loaf pan. Bake at 350 degrees for one hour.
Combine:
1/4 c. catsup
2 tbsp. brown sugar
1 tsp. dry mustard
1/4 tsp. ground mustard
Spread over meatloaf and bake 15 minutes longer.
Makes 6 servings
